The annual obsession with the humble pumpkin is upon us! Carving skills are practiced; Jack O’Lanterns created. Have you thought how you could get the most out of your pumpkins though? Here are some different ways to get full mileage out of your pumpkin…
Pumpkin Soup: as you scoop out the flesh, go as close as you dare to the outer edge, and chuck all that fleshy goodness into a big pan. Add in an onion or two, maybe some cumin, a little water or stock and you’re all set to batch cook a load of hearty soup for the summer. And the seeds! Don’t forget the seeds! Apart from the obvious counting opportunities, what not make your own nutritious roast pumpkin seeds snack? Wash them, toss with a little olive oil, and roast for 10 minutes at 200° (180 if a fan oven) – add a little seasoning if you wish. Easy…
If all of this is too faffy, you can always hang your pumpkins from a tree as the birds and squirrels will love them! But don’t leave them on the ground, as our little spikey hedgehog friends can get quite poorly from them…. Have fun!
